Banana Oat Waffles

Banana Oat Waffles

After first trying out these waffles for a Galentine's Day party, this recipe has now become my new go-to for a healthy breakfast or snack. Not only are all the ingredients easy to find, but they are also healthy, inexpensive, and can easily be made vegan. Although these waffles taste very similar regular ones, the healthy ingredients in them will not leave you feeling so heavy. I would suggest them topped with granola, fruit, and honey, but they also taste great plain! 


Yields 2 large waffles; 5-8 minutes prep, 5 minutes cook

Materials: blender, waffle iron


Recipe

Non-stick cooking spray

2 flax eggs (see below, can substitute for real eggs)

2 cups oats

1 medium, ripe banana

1 cup almond milk

1 1/2 tsp vanilla

1/4 tsp baking soda

1 tsp cinnamon 

Honey or maple syrup (optional, to taste)

Directions

1.) Prep the flax eggs (see below) if you choose to use them instead of eggs.

2.) Preheat and spray the waffle iron.

3.) Combine all ingredients into a blender. Depending on the power of your blender, you may want to slowly add the ingredients as you blend. Because the mixture may be on the thicker side, add more almond milk until it is a semi-thin consistency. 

4.) Once the mixture is smooth, pour half of it into the waffle iron. Leave in for 2-3 minutes or until the outside of the waffles is golden brown. 

This recipe works for pancakes as well!

Flax Egg (substitute for one egg, double for this recipe)

Recipe

1 tbs flaxseed

2.5 tbs water

Directions

1.) Put the flaxseed and water into one bowl and stir.

2.) Let sit for five minutes.

3.) Substitute for one egg (works best for pancakes/waffles and baked goods).
