Dragon Fruit Smoothie Bowl

As the weather gets warmer and the idea of summer begins to cross my mind, I find that there is no better "instant summer" than a tropical smoothie bowl. I use dragon fruit, also known as pitaya, in this bowl as it is rich in vitamins and antioxidants and, as a bonus, it naturally has a really cool, vibrant color. Although this bowl can still be tasty without it, the dragon fruit really gives it that tropical, summery taste and is not too hard to find at a reasonable price in your local health grocery store. I hope that this nutritious bowl recipe sends you to a summer’s day for few minutes even in the midst of the craziness of springtime. Just blend all the ingredients in a blender on low, stirring and adding more liquid as needed!

Recipe

Base

1/4 - 1/2 cup almond milk (start with 1/4th and blend more into bowl as needed)

1 pitaya pack (can be found at Sprouts, Whole Foods, etc. in the frozen section)

1 heaping cup of frozen strawberries

1 frozen banana*

Toppings (pick and choose!)

Fruit: kiwi, mango, fresh banana

Other: granola, shredded coconut, chia, hemp seeds, spirulina, agave 

* If using a non-powerful blender, use fresh banana.
